I love the idea of being healthy, both mentally and physically, but when it comes to a salad, I subconsciously begin thinking about French fries or chocolate. Salad, especially Kale, seems more something I have to eat rather than something I want to eat. Fortunately, I decided to experiment with some of my favorite things, Cajun seasoning and shrimp. You’ll never look at Kale the same again.

2 cups – Kale and baby spinach medley
½ cup – Shrimp, peeled and deveined
1 tsp. – Cajun seasoning
½ tsp. – black pepper
½ tsp. – garlic powder
½ tsp. – Cayenne pepper
½ tsp. – Parsley
1 Tbs. – Olive Oil
1 tsp. – Lime juice
2 – Scallions
2 oz. – Zesty Italian dressing
6 – Croutons
1 – Parmesan cheese

Begin by mixing the Cajun seasoning, black pepper, garlic powder, cayenne pepper, parsley, olive oil and lime juice in a small bowl or ramekin. Add the shrimp and toss, making sure shrimp are well coated, set aside for 5 minutes to marinade.

Place the leafy salad in a large bowl and drizzle the Italian dressing thinly all over. Next, add the shrimp, scallions, croutons and parmesan cheese. I tend to get a large glass of ice water to go with this salad before grabbing a fork to sit down. Enjoy!
