Every time I make this my kids sing and dance, so much that it’s become comedic, but I can relate. When I was young, my brother and I would do the very same thing when our grandmother pulled out her ugly green pressure cooker, because that meant dumplings. You won’t need a pressure cooker for this comfort recipe but you will need a big bowl.

Ingredients:
3 cups – chicken breast, cooked and shredded
8 cups – chicken broth
1 teaspoon – baking powder
1 tablespoon – salt
3 cups – flour
3 tablespoons – butter, melted
1.5 cups – heavy whipping cream, warm

In a food processor, pulse together the flour, baking powder and salt, until evenly mixed 6-8 pulses. Add the heavy cream (may substitute whole milk) and butter. Combine using the food processor until the dough forms a ball. You could also use a kitchen mixer with the dough hook or you could combine all of these ingredients by hand. The dough should be soft but not stick to your finger when touched, if it’s sticky, add more flour, if flaky, add more cream.

Heavily flour a work surface and roll the dumplings out with a rolling pin until about 1/8th of an inch thick. I like to use the KitchenAid Pasta Roller attachment to save time, plus I can fold the dumplings several times before they reach the thickness I like. Once the dough is rolled out, use a pizza cutter or knife to cut the dumplings into 2-inch by 1-inch pieces. Use a spatula to transfer the dumplings to a heavily floured cookie sheet, flour between each layer. If you’re making extra dumplings to freeze, flour them extra heavily and place them inside of a freezer safe bag or container.

In a large heavy pot over high heat, bring the broth to a rapid boil. Add the dumplings one at a time while stirring the broth constantly to prevent them from sticking together; I cannot over-stress the importance of constantly stirring. Also, don’t brush off the extra flour before adding as it will be your thickening agent as the dumplings boil, about 15 – 20 minutes. Add the cooked chicken to the pot, season with pepper and you’re ready to serve.
